What to have for lunch?

Before I begin with today's post, I just want to mention that now that I'm back to school, my blogging may be a bit more mixed up.  I normally post in the morning - but most mornings I am busy so I'm going to likely be posting in the afternoons or evenings. 

Onto today's post.  Honestly, keeping this belly full is quite a job. I'm hungry about every 2-3 hours. I don't eat huge meals, but instead, eat breakfast, lunch and dinner, with about 3 snacks somewhere in there. And I've been pretty good about eating healthy. I totally allow myself pizza if that's what I'm craving - but I just really haven't even been craving crappy food. And all of my snacks are vegetables or fruit. But preparing that much food for a day - it's exhausting.

The fact that I haven't had energy to cook dinner every night means that I don't really have leftovers for the following day's lunch meal. Sigh.  I can't have deli meats, so quick easy-peasy lunches are not really an option.  I made a couple salads for lunches this week - but salads are time consuming to make when I'm trying to get out the door to class.  I made a peanut butter and banana sandwich - but I can't eat that everyday. 

What do you eat for lunch that's quick to make?  I need some lunch ideas.  Oh and I am not a PBJ kind of girl :(

  1. I struggle with lunches, too. A lot of the time I just pack an assortment of things - veggies and hummus, crackers and cheese, some yogurt, a bar of some sort, an apple with peanut butter, etc.

  2. I have the same problem! I don't like "cold" lunches, I must eat something hot, and that makes it tough to pack something in the morning. Today we went to the store with the sole goal being LUNCH! I know you prob don't have access to a microwave...but if you do, make sure to make extras of dinner and pack them the night before- so much easier! good luck!

  3. Lunches are so hard, especially when you can't rely on leftovers! My solution is usually to just buy pre-packaged food like soups, lean cuisines, etc... but I know that's not so healthy all the time. Usually I do what fromatopink does and just bring a hodge podge of snack type stuff.

    Also - you can have deli meat as long as you microwave it until it steams first.

  4. I'm a big fan of making big pasta dinners Sunday night (make Ian do it!) with veggies and stuff so that I can pack away leftovers for the week. You can't get quicker than popping it in the microwave!

    I also like cutting up a veggie burger and eating it with hummus in a whole wheat wrap. That's my go to quick lunch.
